Ménage à Trois Gold - Power Bowl Ingredients:​​
Serves: 4​
- 1 pack Quinoa (10 oz. or serves 4) ​
- 1 pack lentils (serves 4)​
- 2 medium zucchini, sliced lengthwise and grilled​
- 2 medium squash, sliced lengthwise and grilled​
- 2 beets, roasted and sliced​
- 1 cucumber, sliced​
- 2 radicchio, sliced in half​
- 2 apples, quartered​
- 1 cup whole almonds​
- ½ head bib lettuce, washed​
- 4 sprigs of dill​

Ménage à Trois Gold Lemon Dressing​
- ½ cup Ménage à Trois Gold​
- ¼ cup freshly squeezed lemon juice (from about 2-3 lemons)​
- ¼-½ teaspoon kosher salt​
- 1 teaspoon raw honey​
- ⅓ cup extra virgin olive oil​
- 2 scallions, white and green parts, finely chopped​

Directions:​

The Lentils:​
Follow directions on package. ​

The Quinoa:​
Follow directions on package. ​

Ménage à Trois Gold Lemon Dressing​
1. Whisk all ingredients together in bowl.​

The Toppings:​
1. Place the veggies (zucchini and squash) in a large rimmed pan or baking dish. Pour over ¼ cup of the dressing, tossing to coat. Reserve the remaining dressing for the bowls.​
2. Heat an outdoor grill or grill pan to medium heat. Grill the veggies for 5 minutes, flip, then grill an additional 4-5 minutes until golden and just cooked through. Remove to a pan and set aside.​

Assemble the Power Bowl:​
1. Divide quinoa into 4 large bowls and top it off with lentils, bib lettuce, grilled zucchini, grilled squash, radicchio, apple, beets and cucumber. ​
2. Drizzle each bowl with Ménage à Trois Gold lemon dressing.​
3. Sprinkle with almonds and fresh dill.​
