Lemon Salmon with Garlic Rice (SERVES: 4)
INGREDIENTS:
– 1 cup jasmine rice
– Add 1 cup of Ménage à Trois Sauvignon Blanc or Pinot Grigio
– 1 clove garlic, grated
– 1 cup low-sodium chicken stock
– 2 lemons, cut into wheels
– 1 pound fresh salmon
– kosher salt
– Freshly ground black pepper
– 2 tablespoon salted butter
– 1/4 cup Freshly Chopped Parsley
DIRECTIONS:
1. Prepare rice according to package instructions.
2. Add garlic to water before steaming.
3. Fluff with a fork and set aside.
4. Meanwhile, in a large skillet over medium heat add chicken stock and lemons; bring to a low simmer.
5. Season salmon with salt and pepper, anything else you enjoy and add to skillet.
6. Turn salmon to cook evenly until pink, about 2 minutes, or to your preferred taste
7. Turn off heat and add butter; slowly stir to create a creamy sauce.
8. Toss in parsley and serve immediately with garlic rice.
